Vegan Orange Chocolate Chip Cake with Nougat Topping

I love chocolate. Really. If you would have me choose between chocolate and any other sweet dish, I'd more often than not choose the chocolate (as long as it's not the dark dark option, then I'll even go for ice cream, which I'm indubitably not a fan of).
I can't live without it, and so, becoming vegan, it has been very hard for me to transition completely, as there are sooooo many different flavours, one more delicious than the other, but, alas, they nearly all contain milk powder or some other animal product. And the vegan options aren't really that of an option, as they are usually quite bland and well, simply don't do it for me.

I have of course tried to make my own chocolate, and there have been some successful ones and of course a lot of failures, but it hasn't come near to any bought sorts as yet.So, instead of just relying on chocolate to curb my sweet tooth I make chocolate chip cookies, with lots of chocolate (I have even found vegan white chocolate which tastes great in baked goods  -- Vantastic Foods WEISSE SCHAKALODE Buttons), cakes, peanut butter banana ice cream and a big favourite of mine, hot chocolate.

I fell ill a few weeks ago, coughing all the time with a sore throat, and when this happens, I crave comfort food. So I decided to make a cake and mix two flavours which are one of the best combinations in any sweet dish:
chocolate and orange

 So, I give you the

Vegan Orange Chocolate Chip Cake and the best part 
a Nougat Topping


Recipe adapted from Tickling Palates

you will need:

Orange Choco Cake:
All Purpose Flour  - 250g
Baking Powder      - 2Tsp
Baking Soda          - 1Tsp
Salt                        -  1/2Tsp
Sugar                     - 225g
Juice from 2 big Organic Oranges
Orange Zest
Coconut Oil           - 60g
Canola/Sunflower Oil - 60ml
Vegan Dark Chocolate cut into chunks or Chocolate Chips   - 120g     or more, the more the merrier
Cashews or other nuts you prefer                   - 100g

Nougat Topping:
Vegan Nougat, melted  - 150g - in Germany try Ruf Nougat or Aldi Süd Nougat (Aldi Nougat you can only buy from November til the beginning of January
soy whip cream  -200g

First, preheat your oven to 180 °C fan heater and grease and flour a bundt cake tin, a normal cake tin will do too.

2. Mix all the dry ingredients together.

3. In a seperate bowl mix all the liquid ingredients together.

4. Then add the dry ingredients to the wet ones and mix well, so there a no lumps (I use my Kenwood for this, but if you don't own a stand mixer, just go ahead and use a wooden spoon and some elbow grease to combine all the ingredients.

5. Pour the batter into the prepared pan and shove it into the oven

6. Bake for 45-50min or until a toothpick inserted comes out clean.
Let it cool for a while, or just do as I do, cut a piece and it it warm.

7. While your cake is cooking, you can prepare your topping. 
Whip your cream with a whisk, add the melted, only slightly warm nougat, mix and leave it in the fridge for one hour

8. You can eat the cake with or without your topping, but if you love nougat as much as I do, definitely give it a go
